This delectable lunch or dinner recipe has the goodness of health packed with a punch. The best part is it is mostly steamed or boiled hence keeping the nutrients as close to their natural state.
VEGETABLE DUMPLINGS WITH RICE
Ingredients:
*1 cup grated cabbage
*1 cup grated carrot
*½ cup chopped french beans
*½ cup shredded sweet corn
*1 cup shredded sweet corn
*1 cup boiled/steamed potato, mashed
*Black pepper powder to taste
*2-3 chopped garlic cloves
*Salt to taste
*Finely chopped green coriander
*Some soaked basmati rice to to roll the vegetable balls
Serves: 2
Time: 15 minutes
Method:
*Mix the vegetables and other ingredients except the rice and make small balls.
*Spread soaked rice on the plate.
*Roll the vegetable balls in the soaked rice to cover them.
*Prepare the steamer, and place the vegetable balls in the steamer pan.Keep some gap between the vegetable balls to allow steam to circulate.
*Steam for 10-15 minutes
