Eggs, often hailed as one of the most versatile and nutritious foods, have long been the subject of debate over their effects on cholesterol and heart health.
However, Dr Darshan Shah, a board-certified surgeon and wellness specialist based in the US, recently shared on Instagram that eggs are far more beneficial than commonly believed.
“Modern metabolic and cardiovascular research shows that whole eggs do not increase cardiovascular risk in healthy individuals,” Dr Shah said, emphasising that eggs offer far more than just protein.
While both eggs and meat are excellent protein sources, Dr Shah highlighted a key difference. Eggs contain the nutrient blueprint to build an entire organism.
Egg protein has the highest biological value of any natural food, meaning the body absorbs and uses it more efficiently than protein from meat or fish.
The yolk, packed with natural fats and phospholipids, allows roughly 65 per cent of an egg to be converted directly into energy.
Even egg whites provide antimicrobial compounds that support the immune system once cooked, making eggs highly beneficial for daily consumption.
Micronutrients That Support Health
Eggs deliver essential nutrients such as choline, vitamin B12, folate, lutein, and zeaxanthin. These nutrients support brain function, retinal health, and liver function.
The yolk is also rich in phospholipids and vitamins K2, A, and D, which contribute to immunity, bone health, and skin integrity.
Dr Shah noted that while pasture-raised eggs are more nutrient-dense, even conventional eggs surpass most packaged ‘health foods’ in providing vital nutrients.
Dr Shah recommends several ways to enhance egg nutrition: Pair eggs with arugula to boost phytonutrient absorption
Cook with onions to improve detoxification pathways. Add black pepper and sea salt to increase carotenoid uptake. Keep the yolk slightly runny to preserve heat-sensitive nutrients.
“Eating three to four eggs a day isn’t extreme,” he concluded. “It forms a nutritional foundation supporting hormones, cognition, metabolic health, liver function, vision, and cellular repair.”
