1. Amaranth Kheer

Ingredients: 

  • 4 tablespoons of amaranth or rajgira
  • 300 ml of coconut milk
  • 2 tablespoons of coconut, palm, or normal jaggery
  • Flakes of toasty coconut (as a garnish)
  • Chopped toasted mixed nuts: 1 tablespoon

2. Farali Dosa

Ingredients:

  • Sanwa millet (sama), 1/2 cup
  • Amaranth (rajgira) flour, half a cup
  • Half a cup of sour buttermilk
  • 1 tablespoon of ginger-chili paste
  • To taste, add rock salt (sendha namak).

3. Sabudana Khichdi

Ingredients:

  • Sabudana, 1 cup
  • Water, 1/4 cup
  • 12 cups of peanuts
  • 1 teaspoon of sugar
  • Salt as desired.
  • 2 tbsp. ghee
  • 1 teaspoon cumin
  • Not much curry leaves
  • 1 inch of finely chopped ginger
  • 2 green chilies, chopped finely
  • 1 diced and cooked potato
  • ½ Lemon
  • 2 tablespoons of finely chopped coriander
