The Untold History Of Idli: How A Global Journey Created India’s Breakfast Icon

People across India enjoy idli as one of the country’s most popular breakfast dishes because of its soft texture, easy digestibility and nutritional value.

Several food historians believe idli originated beyond India, although people widely regard it as a symbol of South Indian cuisine.

According to noted food historian KT Achaya, the modern idli may have evolved from an Indonesian fermented rice cake known as ‘kedli’, with traders introducing similar cooking techniques to the Indian subcontinent centuries ago.

Some researchers also suggest that Arab traders influenced the use of fermentation in Indian cooking, helping shape the preparation of steamed rice cakes.

Over time, Indian cooks adapted these methods by combining locally available rice and urad dal, creating the fluffy and fermented idli known today.

Ancient Indian texts, including the Manasollasa and Vaddaradhane, mention steamed rice-based dishes that resembled early forms of idli.

As fermentation techniques improved, idli gradually became a staple across Tamil Nadu, Karnataka and neighbouring regions.

The dish’s evolution reflects centuries of cultural exchange, with foreign culinary influences blending seamlessly with Indian ingredients and traditional cooking practices.

Idli holds a special place in South Indian households and is often served during festivals, family gatherings and religious occasions.

People commonly serve idli with coconut chutney, sambar and spiced powders, while many families continue to pass down traditional recipes from one generation to the next.

Beyond its cultural significance, idli remains one of the healthiest breakfast options.

The fermented combination of rice and urad dal provides carbohydrates, protein and gut-friendly nutrients while remaining low in fat.

Served with vegetable-rich sambar and fresh chutneys, it offers a balanced meal suitable for all age groups.
