Janmashtami Special: Make This Easy Watermelon Chia Seed Pudding At Home

Janmashtami celebrations often feature an array of traditional sweets and festive foods. Those seeking a healthier dessert can try a refreshing chia seed pudding.

The vegan recipe uses chia seeds, watermelon, plant-based milk and maple syrup.

The pudding requires no cooking and works well as a breakfast or snack. Fresh fruit and maple syrup can add more flavour before serving.

The recipe uses half a cup of coconut milk, half a cup of unsweetened almond milk and one cup of cubed watermelon. It also requires one tablespoon of pure maple syrup and a quarter cup of whole chia seeds.

To prepare it, blend the watermelon with the coconut and almond milk until smooth.

Pour the mixture into a bowl or glass container. Add the chia seeds and maple syrup, then stir thoroughly.

Let the mixture rest for three minutes. Whisk it again before covering the container. Refrigerate it for one hour or leave it overnight.

Add toppings before serving. Berries, bananas, apples and oranges can provide extra colour and flavour.

Coconut flakes can also be added. Nuts, hemp seeds, sunflower seeds, pumpkin seeds and raisins are other topping options.

Chia seeds contain omega-3 fatty acids, fibre, protein, magnesium, antioxidants and phosphorus. They provide calcium, iron, niacin and thiamin.

Watermelon adds lycopene, an antioxidant that helps protect cells and may lower the risk of some eye diseases.

Plant-based milk options include almond, coconut, oat, cashew and soy milk.

Maple syrup or honey can serve as natural sweeteners. The recipe can also be customised with different fruits and flavours.
