The third and most dependable approach uses a spoonful of existing curd as a starter culture. This ensures a consistent texture and familiar flavour due to active bacterial cultures already present.
Experts advise boiling milk and simmering it briefly to enhance thickness. Allow the milk to cool until warm before adding the culture.
Frothing the milk improves texture and aids uniform fermentation. Set the mixture in a covered container, preferably an earthen vessel, and keep it in a warm place for 5-8 hours. Refrigerate immediately after setting to prevent sourness.
