Millet Khakhra Recipe
Foxtail Millet : Kangini in Hindi or Korallu in Telugu, Foxtail Millet is one of the oldest cultivated types of millet.
Until recently, that is less than half a century ago it was being consumed as a staple diet.
Fox Millet is a great superfood with a delicious nutty flavour.It helps aid in nutrition and keeps disease at bay.
An easy-to-digest protein rich food, it helps control blood sugar and cholesterol. It is a must have for those suffering from diabetes and gastric trouble.
One of the most non- allergic grains, it is highly recommended for the nutrition of children and pregnant women. It is rich in fibre,protein,calcium, vitamins, copper and iron.

Presenting, the Foxtail Millet Khakhra!
We are giving this traditional Gujarati cuisine a nutty, Fox Tail twist.
FOXTAIL MILLET KHAKHRA
Ingredients:
*60 grams Fox Tail Millet flour
*30 grams Wheat flour
*5 grams Soya flour
*5 grams Peanut flour
*2 teaspoon crushed jeera
*5 teaspoon oil
*Salt to taste
*Water for kneading
Method:
*Mix all the dry ingredient
*Using water knead into a soft dough and add oil
*Knead again until the dough is non sticky and uniform
*Rest the dough for 10-15 minutes
*Now roll the dough into 20 grams pieces
*Now make it into a thin roti with a rolling pin
*Spread it on paper for about 10 minutes *Roast on moderately hot on a pan. Keep on continuously pressing and rolling it to prevent it from blowing up
*Roast both the sides until it’s golden brown in colour
*Remove from Pan and let the khara cool
Once cool, the crispy Foxtail Millet khakara is read to be enjoyed!
Tip:
You can store the Khakhra in an air tight container and enjoy it as a snack with chutneys or as a complete meal along with a dal or curry.
