A specially curated vegan gala dinner became a highlight of the BRICS Leaders’ Summit hosted by Prime Minister Narendra Modi at Bharat Mandapam in New Delhi on Saturday.
The plant-based menu showcased India’s rich culinary traditions while reflecting the principles of sustainability, inclusivity and mindful hospitality.
The multi-course dinner opened with refined starters, including Khandvi Mille-Feuille, featuring delicate steamed gram-flour rolls tempered with mustard, coconut and curry leaves.
Guests enjoyed Khumb Galouti, tender mushroom kebabs served with mint pearls and sheermal bread.
The main course offered a diverse selection of Indian flavours.
Paneer Lababdar featured soft cottage-cheese-style cubes in a rich shallot-tomato gravy, while Gucchi Marmik combined Himalayan morel mushrooms and asparagus with saffron, raisins and mamra almonds. Carrot Bean Poriyal, prepared with virgin coconut oil and fresh coconut, added a South Indian touch.
Thakkali Belle Saaru, a light tomato and toor dal broth, Millet Pulao made with basmati rice and pearl millet, Beetroot Raita and assorted Indian breads completed the savoury spread.
Desserts included Old Delhi Fruit Cream with Jalebi and Shahtoot Phirni, offering a blend of seasonal fruits, traditional sweets and slow-cooked rice pudding.
The evening, however, featured a cultural presentation titled ‘Navarasa – The Universe of Shared Emotions’.
The BRICS Symphony, themed ‘One Rhythm, Many Cultures’, brought together musicians from BRICS member and partner countries.
Combining diverse musical traditions with India’s classical dance heritage, the performance celebrated cultural diversity and shared human emotions. It reflected the spirit of togetherness within the BRICS family and reinforced the message of ‘Building a Better World Together’ through cultural exchange.
