Semma, Rania, and Indienne are three Indian restaurants that received stars in the most recent US Michelin awards.

Chef Vijay Kumar  of  Semma, New York

Cooks  Rice with dal or sambar for himself

He says,  “We just wanted to cook our food, tell our stories through food — unapologetically.”

Chef Chetan Shetty  of  Rania, Washington DC

Cooks  Maggi cooked in a rich meat stock instead of water  for himself

He says,  “The Michelin star is more about confidence that what you are doing is (heading) in the right direction.”

Chef Sujan Sarkar  of  Indienne, Chicago

Cooks  Kichadi, preferably one made of millets for himself

He says,  “We do not wait for luck or fluke. If you deserve it, it will happen.”
